Machined from top-quality AUS-10 Japanese stainless steel, and hardened to HRC 57-59, the blade is short and narrow for precision cuts in a wide variety of meats and produce.

Paring Knife Hardware Kit Details:

• Create a professional-grade paring knife by mounting handle scales in the material of your choice
• Short, narrow blade makes it perfect for peeling and slicing fruits and vegetables
• Blade is made from premium Japanese Aichi AUS-10 stainless steel
• Hardened to HRC 57-59 hardness rating for a sharp, durable edge
• Blade design allows for long life of resharpening
• Measures 7-3/4'' long from tip to butt and a little more than 1'' tall
• Handle/tang measures about 3-1/4'' from back face of bolster to butt
• Integral bolster squares off at back face for smooth, easy-to-machine transition to handle scales
• Bolster features 1/8'' round-overs on top and bottom so scales can be machined with router to match profile
• Blade is about 1.7mm thick at spine
• Bolster and handle tang are made from 304 stainless steel
• Includes two 1/4'' x 1-1/4'' stainless steel pins to help secure scales to handle; slots in handle provide additional anchor points for epoxy
